Charles Nicol

He has over 25 years’ experience in hospitality and senior management for leading hotels companies. As operations director of the Village Hotel and Leisure Club brand, he made new openings possible for the four-star chain. Charles joined Levy Restaurants UK in 2011 as regional director for Jockey Club Catering in the North West and now heads up our stadia division and the business excellence team. He’s committed to a solid stadia strategic and enabling our people to provide exceptional experiences.

Having managed racecourses with Compass Group since 2002, Nick now oversees the Jockey Club Catering. Presiding over the Jockey Club’s 15 prestigious racing destinations, he focuses his efforts on creating unique experience for our guests; delivering quality food and service. His cool head has smoothly guided our team through some of the largest events in the racing calendar including the Cheltenham Gold Cup, the Crabbie’s Aintree Grand National and the Investec Derby Festival.

After leading our award-winning team for the past five years, Colin has decided the time is now right to hand over the management reins and is taking up the new part-time consulting role of Strategic Development Partner for Levy UK. Within this role, Colin focuses on large-scale development programmes and partnerships, ensuring that the fantastic culture developed within Levy UK lives on. Colin leads from the front and is passionate that we always exceed the expectations of our partners and guests. Colin has over 20 years’ director-level experience in the hotel, restaurant and hospitality industry, including roles at De Vere Hotels, Greenalls Pubs and Restaurants and Village Hotels and Leisure Clubs, which doubled in size under his leadership between 2002 and 2008.

Andy joined Keith Prowse in 1989 and his first event was the Ryder Cup at The Belfry. He has worked in all areas of the business, starting out in the sales team. Initially he set up the agency sales division and later created an in-bound sales department and The Premier Service key account division. He has been involved in hospitality services at world's most prestigious events, including the Rugby World Cup, Euro 96, The Cricket World Cup, and The FIFA World Cup. He has, throughout his hospitality career, worked with all of the major sporting bodies with whom Keith Prowse holds an official contract.

Jo has enjoyed over 15 years in events and worked at board level within a number of hotel groups. Her passion is selling the unique benefits of unusual venues and she values her personal relationships within the meetings market. Jo’s been featured in the Event Top 100 list. She developed best-in class approaches around the key disciplines for an efficient Events Office – for the Lime Venue Portfolio, our sales and marketing venue consortium.

With over 23 years of experience in the hospitality and events industry, David has worked in our sector for over 20 years, moving into the Health, Safety and Environment (HSE) Team in 2007. David leads an award-wining Levy UK HSE team on the development and implementation of procedures and systems for some of country’s most iconic events and venues.

With 30 years’ experience in the retail and hospitality sectors, Mandy has held senior roles at organisations including J Sainsbury plc, John Lewis and Village Hotels & Leisure Clubs. Throughout Mandy’s career she has devised strategies and led major talent management programmes for hotel openings and acquisitions as well as business transfers and cultural change activities. She is also Trustee Board Member of National Football Museum. Mandy is passionate about developing people to maximise their potential and add value as they grow with the business. She relishes Levy Restaurants UK’s customer facing culture and commitment to creating truly legendary experiences for each and every guest.

Andy Wardle, who has recently joined Levy UK as director of culinary for arena, started his career at Preston FC as Head Chef for Heathcotes ‘Outside’, in 1999. Going on to join the Lindley Group as, Executive Chef, Andy worked at a number of high-profile stadiums including Tottenham Hotspur FC and, afterwards, at prestigious events, such as the Abu Dhabi Grand Prix. With more than 15 years in the industry, Andy has worked with celebrated chefs such as Paul Rankin, Gordon Ramsey, Michel Roux Jr and Marco Pierre White.

Starting in the British Army, Allan gained broad food and service experience before joining Compass as head chef at Cheltenham racecourse. Allan oversees food service at many of the UK’s most prestigious sporting and cultural events These include the Championships Wimbledon, Twickenham, The KIA Oval and Brit Awards.

Frazer Wilson will continue to drive food and drink innovation as director of culinary for Jockey Club Catering and will direct the legendary food and drink experiences of over 1.8million race-goers annually. Frazer will mentor chefs across the 15 strong Jockey Club Racecourses and will drive the food and beverage offering for the world’s most iconic racing festivals, from the The Crabbie's Grand National Festival at Aintree to the Cheltenham Festival and the Investec Derby Festival at Epsom Downs.

Working in high street restaurant chains from age 17, Roy has managed and developed high-profile chef partnerships and restaurant companies, leading operations for Artizian and the White Circle Company before joining Levy Restaurants UK. He brings a wealth of brand, product development, design and customer care experience. His work has been recognised at the Restaurant and Bar Design Awards and International Property Awards.
